Our Fresh Half & Half is separated warm which allows the fat to be separated more delicately then cooled and bottled. Our Fresh Half & Half is not de-natured like ultra-pasteurized half & half. This is the same process that we use to make our gourmet style, 40% butter fat, Heavy Whipping Cream which is the preferred by discriminating chefs.
