Yellow Squash  Casserole

2 tbs butter

3 lbs yellow squash, roughly chopped

2 onions, chopped

1 cup shredded sharp cheddar cheese

1 cup Kraft Mayonnaise

3 eggs, beaten

12 saltine crackers, well crushed

1 pkg dry Ranch style dressing mix (1 ounce)

1 tsp salt

2 cups dry bread or other stuffing mix (unseasoned)

½ cup melted butter


Preheat oven to 350°.

Melt 2 tbs butter in a large saucepan over medium heat.  Cook squash and onions until tender.  Remove from heat and stir in cheese, mayo, eggs and crackers.  Mix well then season with dressing mix and salt.


Spread the squash mixture into a medium baking dish.  Mix stuffing and ½ cup melted butter and sprinkle over squash mixture.

Bake 20 -30 minutes or until firm and lightly brown on top.
