Sausage Bean Casserole

1 lb ground pork or turkey sausage

½ cup chopped onions

½ cup chopped green peppers

1 lb cooked speckled butter beans (Navy can be used, as can canned. I used Kidney Beans!)

2 cups diced canned tomatoes

½ cup tomato sauce

¼ tsp salt

1/8 tsp pepper

 

Brown sausage, onions and green peppers in saucepan.  Combine all ingredients in slow cooker. Cover and cook on high for 2 hours.   Serve over rice if desired.   This is my teen aged son’s favorite casserole!
