Glazed Blueberry Bread
Ingredients for Bread:
2 cups all purpose flour
1 Tbsp baking powder
1 c sugar
1/4 tsp salt
1-1/2 c canned blueberries (reserve the ‘juice’).
If using fresh, save a few berries to crush and add to glaze.
2 tsp fresh squeezed lemon juice
3 Tbsp vegetable oil
2 large eggs
1 cup Dairy Maid Dairy Whole Milk
Glaze:
1 cup powdered sugar
2 tbs water mixed with approximately 2 tbs. of the syrup from the blueberries.
Should look ‘purple’ Drizzle over cooled cake.
Directions:
Combine flour, sugar, baking powder and salt Stir in blueberries. In another bowl, beat eggs; add milk, oil and lemon juice Stir into the dry ingredients mixture, just until moistened. Pour into a greased 9×5 loaf pan. Bake at 350° for one hour or until toothpick tests clean. Let cool for 10 minutes, remove to a wire rack to cool completely. Top with glaze!
Serve with a large glass of Dairy Maid Dairy Milk and enjoy!
