CHICKEN FRIED RICE

 

3 eggs gently beaten

2 boneless chicken breasts  cooked and diced

2 to 3 cups  cooked  rice

3 green onions, chopped

1/2 c. broccoli flowets

1/4 c. sliced carrots, canned or cooked until tender,  plus frozen or canned peas

Soy sauce to taste

Oil
Put 1 tablespoon oil in hot wok or frying pan and scramble eggs. Set aside. Put 1 to 2 tablespoons oil in wok and fry rice until rice is soft, 10 minutes. Stir frequently. Add soy sauce (soy sauce is salty so add according to YOUR taste) until rice is brown.  Add eggs, meat, onions, and other vegetables. Cook until warm through, stirring frequently.
