Baked Eggs in Hash Browns!

Baked Eggs in Hash Browns! 
servings:  2hashbrowns with eggs
Ingredients
  • Left over hash browned potatoes
  • 1 tsp butter
  • 1 Tbsp jalapeno, seeded and finely diced
  • 1/4 cup sweet onion, diced
  • 1 clove garlic, diced
  • 1/4 cup mozzarella cheese, shredded
  • 2 eggs
  • salt and pepper to taste

Instructions

  1. Preheat oven to 350° .  Preheat a small skillet over medium high heat.
  2. Melt butter in the skillet and add the onion and jalapeno.  Cook 3-5 minutes, stirring occasionally, until starting to soften.
  3. Add the garlic and cook another minute, stirring occasionally.
  4. Spray two small ramekin dishes with non-stick spray.  Divide the left over hash brown potatoes between the two dishes.
  5. Stir the onion, chili, garlic mixture into the dishes.
  6. Top with the mozzarella.
  7. Crack an egg into each ramekin.  Season with salt and pepper.
  8. Bake in the oven on the middle rack for 5 minutes.
  9. Broil on high for 5-6 minutes or until the eggs are set.
  10. Rest for 5 minutes before serving.

    When you say left-over hash browned pieces, do you mean left over after being cooked? or left over raw? Awesome idea, thanks for sharing.

    • Left over ‘cooked’ hash browns. Since the egg only takes a few minutes to cook, raw hash browns wouldn’t be done that quickly. I always have left over hash browns. Actually, I’m thinking of trying this is left over mashed potatoes. My husband’s grandmother would make left over mashed potatoes into patties and fry them for breakfast the next day. I think that MIGHT work. Might need to cook these a tiny bit longer to keep it from falling apart but would also need to really oil the tin!

      • For the left over mashed potatoes, need to add some flour and an egg to the potatoes. It makes them more of a pancake batter texture and keeps them from falling apart. If going to serve like pancakes, a little sugar makes them sweet.

  4. Do you bake for 5 minutes AND then broil
    OR do you pick one of them – bake OR broil

    • I do both but watch the eggs carefully! You only broil until the eggs are cooked thru. Since the ‘bottoms’ have already cooked 5 minutes, you only want to finish up the top. I know some people will puncture the yolk and cook that til solid, but we like sunnyside up!

    This recipe sounds delicious and ….. quick! I think I will try baking them in non-stick, mini muffin tins as that way, a batch possibly could be made at once? (Shall try only one at first. ☺) Thanks for sharing it.

    My mom and grandma used to make potatoe pancakes also and they are great like the other woman said you have to add a little flour and an egg to make them stick together better but very delicious.

    I have tried this but following the times given, the whites of the eggs
    did not get done the yolk did but not the whites. What did I do wrong?
