Apple Glazed Pork Kabobs on the Grill
1 lb boneless pork loin cut into 1 inch cubes
2 tbs lemon juice
Salt to taste
1 cup apple jelly
1 tsp cinnamon
2 tbs butter
Sprinkle lemon juice and salt over pork cubes. In a small pan, make glaze by mixing together the jelly, lemon juice, cinnamon and butter. Simmer until well blended. Thread pork cubes onto wooden skewers and coat with glaze. Grill over hot fire for 10 – 12 minutes, turning and basting often. Can be cooked in the oven, too.
