Turkey Meatloaf

Turkey Meatloaf

3/4 cup quick-cooking oats
1/2 cup Dairy Maid Dairy Milk
1 medium onion, peeled
2 lbs. ground turkey
1/2 cup chopped bell pepper
2 large eggs, beaten
2 tsp. Worcestershire sauce
1/4 cup ketchup
1/2 tsp. salt
freshly ground black pepper
8 oz. can  tomato sauce

Preheat oven to 350°.  Stir together the oats and milk in a small bowl and allow to soak for about 3 minutes.  Thinly slice about 1/4 of the onion into rings and set aside.  Finely chop the rest of the onion.  In a large bowl, combine the turkey, oatmeal and milk, the chopped onion, bell pepper, eggs Worcestershire sauce, ketchup, salt and pepper.  Mix until just combined.

Put mixture into a 9×13″ baking dish and shape into a loaf about 5″ wide and 2″ high.  Pour the tomato sauce over the meatloaf and sprinkle with the sliced onions.  Bake for about an hour, or until a thermometer inserted into the center reads 160°.  Remove the meatloaf from the oven and let rest for 15 minutes before slicing.
