Irish Boiled Dinner

 

3 to 4 lb corned beef brisket

8 small onions peeled

8 medium to large carrots

4 potatoes, peeled if desired, halved or quartered

2 turnips (if desired) cubed

1 medium green cabbage cut into wedges

 

Place brisket in a large iron kettle. Cover with cold water.  Cover with a tight lid and simmer for 3 ½ hour or until tender.  Skim fat from top.  Add onions, carrots, potatoes and turnip.  Cover and simmer for another 20 minutes. Remove meat to platter. Add cabbage to kettle and simmer with the other vegetables for 10 to 15 minutes or until all vegetables are tender.

Cut brisket thinly on a diagonal slice.  Rotate plate and slice a few sections from each side until all meat is sliced.
