Cod and Vegetables with Creamy Herb Sauce on the grill! 

 

1/2 cup sour cream

14 cup mayonnaise

2 scallions finely chopped

1 tbs red wine vinegar

1 tsp Mrs. Dash Garlic and Herb Seasoning salt free

1/8th tsp salt

1/8 tsp black pepper

1 lb asparagus, trimmed

2 large red peppers, cored, seeded and cut into strips

2 large yellow (Summer) squash cut into 1/4th inch pieces

1 1/2 lbs cod (bass or other fish)

2 tbs olive oil

2 tbs Mrs. Dash seasoning as above

1/8th tsp salt

 

In medium sized bowl, stir together sour cream, mayonnaise, scallions, vinegar, seasonings.  Cover and refrigerate.

To prepare veggies and fish:  Heat grill to  a medium heat and coat rack with oil or PAM cooking spray.

Brush asparagus, peppers, squash and fish with oil.  Sprinkle with Mrs. Dash seasoning.  Grill veggies about 8 to 10 minutes, turning often.  Grill fish flesh side down for 5 minutes and then turn and grill another 3 minutes or until cooked.  Sprinkle veggies and fish with salt.  Remove to platter and top with refrigerated sauce.
